A different pasta dish each day including: bavette with squid ink; fusilli “alla norma” (aubergine, tomato & basil); penne with a vegetarian carbonara (courgette instead of ham/bacon, which of course is impossible to find in Muslim countries); fusilli with king prawns; penne with grouper fish; fusilli with courgettes and prawns; bavette al pesto. As one would hope on an Italian-run yacht, all pasta dishes are properly cooked al dente, and where the sauce requires it, Parmigiano Reggiano cheese can be added.
As a light dessert, fruit salad or an artfully laid-out plate of freshly cleaned and prepared whole fruit.
A different soup is prepared each evening - from carrot, tomato or lentil to prawn, fish soup or minestrone.
To follow - fresh fish from the day’s catch - everything from the prized giant crabs to grilled king prawns and langoustines, from king fish to baked grouper, from mixed fried fish to prawns and squid or fish kebabs. The fish is accompanied by rice (again, prepared in a variety of ways) and vegetables.
Dessert - exceptional cakes or cooked fruit.
Coffee is always freshly prepared using the traditional Italian moka;
drinks - sparkling or still water, soft drinks.
